Our client, an upmarket camp in Masai Mara is looking for a passionate Head Chef. The successful candidate will be responsible to achieve food revenue, profile targets and above all meet guest and staff satisfaction goals. At least 5 years of Chef experience in a 4 or 5-star environment is required. Experience working in a Lodge/Camp is an added advantage.
Key Responsibilities
- Overseeing kitchen operations and being actively evolved with the physical cooking of dishes when service starts.
- Ensure adherence to the Hygiene and HACCP Standard Operating Procedures.
- To follow, monitor, manage, train, review and implement performance standards to establish and maintain a streamlined and efficient operation.
- Have a full working knowledge of the Chodawu agreement, local legislation and labor law.
- To support staff needs in other departments and properties based on the property priorities and anticipated business levels.
- To manage monitor all costs and implement measures to control them.
- Ensure that the necessary stocks are ordered and on hand at the right quality and quantity.
- Assume full responsibility for costs, stores, losses, discrepancies and expired stock items.
- To ensure that the department operational budget is strictly adhered to.
- To review monthly forecasts and schedule resources accordingly.
- Meeting with guests during their stay.
Qualifications:
- Degree/diploma from a reputable institution.
- Minimum 5 years of Chef experience.
- Excellent creative and artistic flair.
- People skills – tolerance, patience and caring at all times, but also able to take the necessary disciplinary action when needed.
- Hosting skills – to promote our hospitality ethos within our property during meal service.
- Excellent communication skills.
- Excellent hygiene principles.
- Team player with positive attitude and enthusiasm.
- Excellent time management, interpersonal & problem-solving skills.
