Our client, one of the biggest hospitality companies in Sudan is looking for a Creative Senior Sous Chef. The successful candidate will manage the production of food according to standard recipes and hygiene standards and will be responsible to control the resources as well as cultivating the understanding of good food throughout the Central Kitchen. The candidate needs to be able to handle stress and be a strong leader.
Key Responsibilities:
- Manage a section within the kitchen with the assistance of a Chef de Partie and Commis Chef.
- Ensure that dishes are prepared and cooked according to the specific Central Kitchen standards.
- Ensure that stock is rotated and controlled within the specific section of the kitchen.
- Ensure compliance with personal hygiene, and hygienic environment in the workplace.
- Ensure all policies, procedures, standards & guidelines are carefully adhered to.
- Manage daily operations of providing professional leadership and direction to kitchen personnel.
- Place orders with food suppliers.
- Control and issue internal requisitions.
- To perform on the job training and improve the skills of subordinates.
- Minimize, manage and eliminate all types of job waste and adopt lean/kaizen practices and approaches when and as necessary.
- Implement the company performance management system and cycle effectively (planning, monitoring and evaluation stage).
Qualifications:
- Specialized Education/Technical school education.
- 5-7 years of experience in similar position in a 5 star environment.
- Must be presentable.
- Excellent understanding of various cooking methods, ingredients, equipment and procedures.
- Accuracy and speed in executing assigned tasks.
- Familiar with industry’s best practices.
- Must be able to work long hours under extreme pressure.
- To be fully aware of all hygiene control and chemicals used.
- Strong communication skills.
