Our client, a Service Support Company with Head offices in Dubai, is looking for an experienced and hardworking Head Chef for their Oil & Gas Camp in Basra. The successful candidate will be in charge of organizing all the kitchen activities. He/she will be the first in command in the facilities and will create and inspect all the dishes before they are served to the customer ensuring high quality and contentment. He/she should have knowledge of many different cuisines including but not limited to Europe, India and Asia.

Duties & Responsibilities:

  • Take full control and direct the team through the food preparation process and any other related activities
  • Construct menus using new or existing culinary technics and trends to create good quality food ensuring that there is always a fresh and exciting variety
  • Approve and finishing every dish that leaves the kitchen before it goes out and is put in front of the customer
  • Plan orders for ingredients on a daily, weekly and monthly basis
  • Control stocks to ensure there is minimum out of date issues and stock items are used up in time
  • Plan orders for equipment so the kitchen always runs smoothly and effectively
  • Arrange for repairs and general maintenance when necessary
  • Motivate, discipline, manage and train the kitchen staff
  • Oversee the work of subordinates
  • Estimate the staff’s workload and roster the shifts accordingly
  • Maintain records of attendance and keep track of leave days due
  • Comply with nutrition and sanitation regulations and safety standards
  • Be a team player who creates a climate of co-operation and respect between coworkers, that has a desire to do their best

Qualifications:

  • Proven experience as Executive Sous Chef or Head chef – Approximately 10 years.
  • Proven ability to manage a kitchen.
  • Ability to delegate responsibilities & thoroughly monitor the food preparation process.
  • Excellent communication skills with a knowledge of Continental, Indian & Asian cuisine.
  • Excellent leadership skills.
  • Up to date with culinary trends and cooking techniques that can optimize kitchen processes.
  • Good understanding of the health and safety requirements of a busy kitchen.
  • A valid up to date passport and medical certificate.
  • Knowledge of Arabic would be helpful but not essential.
